Update subsequent chapters to use uv as well

Switching to uv is a great idea -- much easier and faster than Anaconda, but most of the rest of the chapters are using a mixture of pip install and conda install.

I've updated these to use uv add (or, as necessary, uv tool install, and in one case uv pip install). The only remaining uses of pip are for use with Google Colab.
