[26.1.stable] MacOS Finder info still shows former semantic versioning scheme in Version property

Reproducible in 26.1.stable, including mono. Prior versions are not applicable (not counting 26.1 beta versions).

Issue description

When viewing the app's information/properties in Finder on MacOS, the Version property shows 4.5.2, when the version is expected to be 26.1 or similar. This occurs on both mono and non-mono versions.

(I have personally renamed the app to include its official version number for clarity, since I also have other prior versions of Redot simultaneously installed.)

Steps to reproduce

• Download any MacOS version of Redot 26.1.stable;
• Open the ZIP archive and click the app to view its information (must be in either Column or Gallery view, or right-click app and select "Get Info");
• Observe the Version property.

@tindrew Could you look at changing this and testing it on your mac?

Also we should consider adding automation for this file's version number, there is no reason it should have to be hardcoded like this

Yeah, that is likely the issue, and him building it locally wont trigger this. This file is only used for signing and packaging.

I might need to add a step in the CI to replace this in the build process.

I am kinda surprised they dont seem to have a mechanism to sync this with the engine version...
